Italian-Inspired Spice Mix

Italian Spices, create your favorite blend for sauces, soups, and sausage. Oregano, basil, garlic, onion, bay leaf, salt, pepper, sage, thyme, parsley, crushed red pepper, cayenne pepper, fennel seed. Diet and budget friendly

Italian flavor is a big crowd-pleaser from kids to grown ups.  It’s also pleasing to make, because the home cook can get creative and have a lot of fun designing the perfect sauce.  It’s all based on personal taste, so it seems like no two recipes are the same!  And that’s alright, because there is no right or wrong flavor, just what makes your family happy.

Make-Ahead Thanksgiving Freezer Meals

Gluten and Dairy Free Make-Ahead Thanksgiving Dinner Freezer Meals - recipes included for turkey, seasoning, stuffing, gravy, jellied cranberry sauce, nutty acorn squash, green bean casserole with homemade french fried onions, and pumpkin pie spice non-dairy frozen dessert bars - healthy ADHD diet

We do a lot of traveling for the holidays.  This year we have the potential to go to four thanksgiving dinners.  I’m looking forward to visiting with family and eating their grub, but my son’s restrictive diet won’t allow him to join us in eating many traditional Thanksgiving foods. While extended family has been supportive of our son’s diet changes, I’m not expecting our dinner hosts to spontaneously swap out traditional ingredients for my son’s extensive list of sensitivities.  In my opinion it’s rude to assume that a host should take up that burden.  That’s why I’m coming prepared with pre-made, diet-friendly microwave meals so my son can still enjoy Thanksgiving with the rest of us.

Thanksgiving Turkey with Gluten/Yeast Free Stuffing and Gravy

Thanksgiving Turkey with Stuffing and Gravy - gluten, yeast and dairy free, ADHD diet, dinner recipe for two, poultry seasoning mix recipe
The small turkey portion, gravy and stuffing recipes prepared in this tutorial were created for my son’s make-ahead Thanksgiving meal.  They provide enough food for two adults (with some leftovers), or in my son’s case, 4 freezer meals.  Using one common ingredient, the turkey poultry seasoning, all were prepared in the same cooking session.

Nutty Acorn Squash

Nutty Acorn Squash - fall recipe, Thanksgiving, can be easily adapted for dairy-free, healthy, ADHD diet

This beautiful fall dish was adapted from Betty Crocker and is easily modified for the ADHD diet.  It appeals more to the adult palette, but if you want to get your kid into the kitchen this is a good recipe to try.  Sometimes kids are more willing to try foods that they have helped prepare.  Aside from the slicing, my son has been able to help me with preparation and as a result, this is one of his favorite fall foods.  Give it a try!

Gluten and Dairy Free Green Bean Casserole

Green Bean Casserole - Dairy and Gluten Free - includes recipe for homemade French Fried Onions and Cream of Mushroom Soup - ADHD diet - Thanksgiving and Christmas holiday meal side dish

Green Bean Casserole is my favorite Thanksgiving food.  I have a hard time envisioning my son going without it this year now that we are aware of his food sensitivities.  I put this dish together ahead of time as part of a make-ahead Thanksgiving meal that we’ll take with when we visit relatives this holiday.  Since I only needed to make enough to accommodate my 8-year-old son for a few dinners (and swipe some for my dairy-free toddler), the quantity is small – the entire thing fits well in a 4-cup container.  So if you need more, you can easily double the ingredients.
