Make-Ahead Thanksgiving Freezer Meals
We do a lot of traveling for the holidays. This year we have the potential to go to four thanksgiving dinners. I’m looking forward to visiting with family and eating their grub, but my son’s restrictive diet won’t allow him to join us in eating many traditional Thanksgiving foods. While extended family has been supportive of our son’s diet changes, I’m not expecting our dinner hosts to spontaneously swap out traditional ingredients for my son’s extensive list of sensitivities. In my opinion it’s rude to assume that a host should take up that burden. That’s why I’m coming prepared with pre-made, diet-friendly microwave meals so my son can still enjoy Thanksgiving with the rest of us.
Thanksgiving Turkey with Gluten/Yeast Free Stuffing and Gravy
The small turkey portion, gravy and stuffing recipes prepared in this tutorial were created for my son’s make-ahead Thanksgiving meal. They provide enough food for two adults (with some leftovers), or in my son’s case, 4 freezer meals. Using one common ingredient, the turkey poultry seasoning, all were prepared in the same cooking session.

Nutty Acorn Squash
This beautiful fall dish was adapted from Betty Crocker and is easily modified for the ADHD diet. It appeals more to the adult palette, but if you want to get your kid into the kitchen this is a good recipe to try. Sometimes kids are more willing to try foods that they have helped prepare. Aside from the slicing, my son has been able to help me with preparation and as a result, this is one of his favorite fall foods. Give it a try!
Gluten and Dairy Free Green Bean Casserole
Green Bean Casserole is my favorite Thanksgiving food. I have a hard time envisioning my son going without it this year now that we are aware of his food sensitivities. I put this dish together ahead of time as part of a make-ahead Thanksgiving meal that we’ll take with when we visit relatives this holiday. Since I only needed to make enough to accommodate my 8-year-old son for a few dinners (and swipe some for my dairy-free toddler), the quantity is small – the entire thing fits well in a 4-cup container. So if you need more, you can easily double the ingredients.
