Sausage Seasoning

Sometimes it’s hard to find nitrite free pre-seasoned sausage.  Use this spice recipe to achieve the sausage flavor in patties, gravies, and skillets.  Recipe ideas follow.

SEASONING INGREDIENTS:

  • 1-1/2 tsp Ground Sage
  • 1/2 tsp Thyme Leaves
  • 1 tsp Salt
  • 1-1/2 tsp Parsley Flakes
  • 1/2 tsp Crushed Red Pepper
  • 1/4 tsp Ground Nutmeg

Additional/optional complimentary flavors:

  • 1/2 tsp Ground Marjoram
  • 1/2 tsp Ground Rosemary

DIRECTIONS:

Mix ingredients together before creating your meal.  When seasoning meat, the spice recipe above will be enough for 1-2 lbs of ground meat.

Breakfast Sausage Patties

INGREDIENTS:

  • Sausage Spice Mix (above)
  • 2 lbs thawed unseasoned ground meat (beef, turkey, ground pork)

DIRECTIONS:

  1. Mix the sausage spices and meat together in a large mixing bowl.
  2. On your stove top, turn a large pan to medium heat.
  3. Form into patties, however wide you want and 1/4 – 1/2″ thick.
  4. Cook until thoroughly browned, about 5-10 minutes, flipping patties over every couple minutes.

TIP:  The patties will taste great if you want to cook them right away, but if you allow the seasoned meat sit in the fridge for several hours or overnight the flavors will marry.

Sausage Gravy

INGREDIENTS:

  • 1 lb ground unseasoned meat (beef, turkey, pork)
  • 1/4 cup animal fat, such as butter replacer, bacon fat, or drippings from cooked meat
  • 1/4 cup starchy gluten-free flour (ex: rice, all-purpose gluten-free baking mix, potato)
  • 2 cups unsweetened original cashew milk (you can also use another milk substitute – cashew is recommended because it is creamier
  • Sausage Spice Mix (see recipe)
  • 1/2 tsp Salt

DIRECTIONS:

  1. Brown the ground meat in a large pan on medium heat.
  2. Remove ground meat from pan.  Strain remaining fats from the meat and measure 1/4 cup.  Place at least ¼ cup fat back into the pan.
  3. Add 1/4 cup of flour to the pan, then immediately whisk into fat to ensure an even blend.  The mixture will bubble very quickly.  Add 1/2 cup of the milk and whisk into the mixture, making sure to blend thoroughly and avoid lumps.  Add remainder of milk and blend again.
  4. Continue to heat on medium, continually whisking, until the mixture becomes thick.  Remove from heat.
  5. Stir in Sausage Spice Mix, salt and browned meat.
  6. Let cool for several minutes, then serve on gluten-free drop biscuits.

Breakfast Skillet

INGREDIENTS:

  • Sausage Spice Mix
  • 1 lb unseasoned ground meat (beef, turkey, or pork)
  • 1 small onion, chopped
  • 2 Tbsps cooking oil
  • 9 whisked eggs

Optional:

  • 1 chopped bell pepper, seeds and stem removed
  • 1 medium chopped onion

DIRECTIONS:

  1. Brown ground meat with spices on medium heat in a large skillet pan.  If using vegetables, add to the pan after some fat has been rendered and cook until soft.
  2. When the meat (and vegetables) are thoroughly cooked, scoop into a separate bowl, leaving rendered fat in the pan.  Pour whisked eggs into the skillet and scramble.
  3. When the eggs are done, remove pan from heat and stir meat (and optional vegetables) into the pan.
