Taco Seasoning

Don’t spend extra money on taco seasoning packets at the store, make it at home with your spices!  You can do it! 🙂

TACO SEASONING INGREDIENTS:

  • 1 Tbsp chili powder
  • 1 Tbsp paprika
  • 3 tsps cumin
  • 1 tsps garlic powder
  • 1 tsps onion powder
  • 1/2 tsp oregano
  • 1 tsp salt
  • ½ tsp cilantro (optional)

~ Makes about 4 Tbsps seasoning mix

DIRECTIONS:
Mix ingredients together before creating your meal.  Add additional heat using ground black pepper, crushed red pepper, cayenne etc.  It’s best to add these directly to the meal, not the seasoning mix, to make sure the mix itself doesn’t get too spicy for the mildest palettes in your family.

TIP: When seasoning meat for tacos, add 2 Tbsps seasoning + 1/2 cup water to meat for each pound used.  Stir to coat.

Taco Rice

This recipe is easily modified into a soup…

INGREDIENTS:

  • 2 lbs ground beef or turkey, OR 3-4 cubed chicken breasts (when using chicken, add 2 Tbsps cooking oil to ingredients)
  • 3 cups water
  • 5 tsps Mexican-inspired seasoning
  • 3 cups instant brown rice
  • ¼ tsp salt

Optional vegetables:

  • 1 cup frozen or canned corn
  • 1 chopped bell pepper
  • ½ medium onion

DIRECTIONS:

  1. Brown the meat in a large skillet on medium.  (If using cubed chicken, heat 2 Tbsps cooking oil before adding chicken to the pan.  Make sure it is thoroughly cooked before step 2).
  2. If you are including vegetables, add them and cook covered on low/medium until they are heated/soft.
  3. Add seasoning, salt, and 3 cups of water and turn heat to high.  When water starts to boil, add rice, stir and reduce heat to low/medium.
  4. Cover and simmer until rice is soft, up to 15 minutes.  Since the rice will absorb the water, check occasionally to make sure the ingredients don’t burn to the pan.

Quick and Easy Taco Soup

Easily turn the TACO RICE INGREDIENTS above into a soup.  Use 4 cups of broth instead of water and reduce rice to one cup instead of 3.


DIRECTIONS:

  1. Follow step 1 in Taco Rice recipe above.  Use a soup pot instead of a skillet.
  2. Add remaining ingredients to the soup pot.  Heat on high to boiling.
  3. Reduce heat to low/medium and cover.  Cook until rice and vegetables are soft, about 10 to 15 minutes.
