Beefy Recipe Inspiration

Beef Stew

INGREDIENTS:

  • 1 lb ground beef or turkey, or 1 lb of beef stew meat
  • 4 cups beef broth
  • 2 cups water
  • 1 8oz can tomato sauce
  • 2 Tbsps Worcestershire sauce
  • 2 tsps parsley
  • 1 tsp garlic
  • ½ tsp thyme
  • 1/4 tsp salt
  • 2 bay leaves

Vegetables (all optional):

  • 1 small-medium chopped onion
  • 1 cup peas, frozen or canned
  • 1 cup carrots, baby cut or sliced
  • 1 stalk chopped celery
  • 8 oz fresh mushrooms, or 1 6.5oz can mushrooms (can be sliced or whole)
  • 1 cup corn kernels, frozen or canned
  • 3 medium-sized potatoes, cubed
  • 1 cup green beans, frozen or canned

DIRECTIONS:

  1. If using ground meat, brown.  Otherwise, skip this step.
  2. Put all ingredients into a large soup pot.  Heat to boiling, reduce heat to low/medium and simmer covered for 15 minutes, or until all vegetable choices are soft/meat is thoroughly cooked.

TIP: the longer the soup sits at low heat, the more the flavors will marry.  This is also true for leftovers in the refrigerator.

Homemade Hamburger Helper

INGREDIENTS:

  • 1 lb ground beef or turkey
  • 4 cups gluten-free small noodles, such as spirals, penne or shells
  • 2-1/2 cups beef broth
  • 2-1/2 cups unsweetened original cashew milk (you can also use another milk substitute – cashew is recommended because it is creamier
  • 1 tsp cumin
  • ¼ tsp salt
  • 1 tsps onion powder
  • 1-1/2 tsps garlic powder
  • 2 tsps paprika
  • 1 tsp chili powder

DIRECTIONS:

  1. In a large skillet pan, brown ground meat
  2. Add liquid and spices, then stir in noodles.  Heat on high to boiling.
  3. Reduce heat to low/medium and simmer covered for 10 minutes, checking and stirring occasionally.

Skillet Stroganoff

INGREDIENTS:

  • 1 lb ground beef or turkey
  • 8 oz mushrooms, sliced
  • 4-½ cups unsweetened original cashew milk (you can also use another milk substitute – cashew is recommended because it is creamier
  • 1 Tbsp Worcestershire sauce
  • 1-½ tsp parsely (or tarragon – not many people stock this spice)
  • 1-½ tsps onion powder
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 cups gluten-free small noodles, such as spirals, penne or shells

DIRECTIONS:

  1. Brown ground meat in a large skillet pan, do not strain fat.
  2. Add remaining ingredients except for noodles, stir, heat on high until boiling.
  3. Add noodles and stir.  Reduce heat to low/medium and simmer covered until the noodles are soft, about 10 minutes.  Check/stir occasionally to ensure the noodles don’t cook to the bottom of the pan.
  4. Remove from heat.  Will thicken upon standing.
