Kids’ Spaghetti and Meatballs

Convenience meals don’t have to be a thing of the past when you’re on an ADHD diet.  As long as you have some quality time to cook with your kiddo, you can make this kid favorite to pull out of the freezer on busy evenings.

This recipe is reminiscent of Spaghettios, but does have a touch more of an authentic Italian flavor.  If your kid is like mine, they will enjoy helping you squish the meat between their fingers while mixing the meatball ingredients.  The “roll and drop” meatball method will also go a lot quicker if you have another set of hands helping out.  You are going to get a lot of little meatballs out of this recipe!

You could serve this meal for dinner, or you could store it in freezer bags after the ingredients have cooled.

INGREDIENTS:

Pasta

Spaghetti Sauce

  • 6 x 8 oz cans tomato sauce
  • 2 cups water
  • 1 tsp garlic powder
  • 1 Tbsp onion powder
  • 1/2 tsp salt
  • 1 tsp oregano, basil
  • 1/2 tsp parsley
  • 1/4 tsp pepper

 Meatballs

  • 16 oz package ground turkey (or beef)
  • 12 oz package seasoned nitrite-free ground pork
  • 3/8 cups ground flax seed (can substitute with 1/4 cup breadcrumbs + 1 egg OR 1/4 cup gluten-free breadcrumbs + 1 egg)
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp parsley
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp pepper
  • 1/4 tsp ground marjoram
  • 1/8 tsp cayenne pepper
  • 1/2 tsp salt

DIRECTIONS:

  1. Cook the noodles, drain, and add olive oil to keep the noodles from sticking together.
  2. Pour all sauce ingredients into a large pot, stir, and heat on high until boiling.  Reduce heat to medium.
  3. As sauce is heating, mix all meatball ingredients together in a large mixing bowl.
  4. Once sauce is reduced to medium, roll nickel-sized meatballs and drop into the hot spaghetti sauce one by one.  The heat will quickly cook the outsides of the meatballs, keeping them from sticking together.
  5. After the last meatball has been rolled and dropped, cook sauce for another 7 minutes.
  6. Serve spaghetti and meatball sauce on top of pasta, or allow to cool and store in freezer bags.
